Homemade thin pancake recipe
Nothing says "I love you, Dad" like a delicious homemade breakfast. Here's a simple pancake recipe that will delight the whole family. We love that recipe because the thin pancakes are easy to roll.
Ingredients:
2 cups all-purpose flour
4 tablespoons sugar
2 pinches salt
4 eggs
3 cups milk
1 teaspoon vanilla extract
Recipe can be doubled to make more pancakes.
Instructions:
Prepare the dough: Mix the flour, sugar and salt in a large bowl. Make a well in the center and add the eggs. Mix gently, adding the milk a little at a time, until the dough is smooth. Add vanilla extract if desired.
Cooking the crepes: Heat a pancake or non-stick pan over medium heat. Add a small amount of butter or oil to grease the pan. Pour a ladleful of batter into the pan and cook one side and then flip and cook the other side until golden brown.
Serve hot with toppings of your choice: maple syrup, fresh fruit, jam, chocolate and hazelnut spread, or anything that you enjoy with your pancake.
